Carrot Cake + Coconut Frosting Recipe



Paleo Coconut Frosting
(makes 3 cups)

Ingredients

- 1 cup coconut milk
- 1/2 cup raw organic honey
- Dash sea salt
- 2 tablespoons arrowroot powder (arrowroot contains starch not 100% Paleo)
- 2 tablespoons water
- 1 1/4 cups coconut oil (melted)

Preparation:
- In medium saucepan add coconut milk, honey and salt over medium heat mix well.
- Reduce heat and simmer for 10-15 minutes, constantly stirring
- In separate bowl combine arrowroot paste with water and make paste.
- Combine arrowroot paste with mixture at medium heat mix well until mixture thickens (approximately 1-2 minutes).
- In separate bowl remove mixture from saucepan and slowly stir in coconut oil. Until mixture thoroughly blended and smooth.
- In covered container place in freezer for 30-45 minutes.
- Remove from freezer and stir until thick.
- Frost carrot cake
- Optional sparkle frosting with crushed walnuts or shredded carrots.


Paleo Applesauce Carrot Muffin Recipe
Gluten and dairy free dessert recipes. Made with almond flour, almond milk and applesauce.
Great warm with almond or pecan butter.
Ingredients:


- 2 1/2 cups almond meal/flour
- 3 large eggs (beat well)
- 1/4 cup raw honey
- 1/2 tsp baking powder
- 1/2 tsp sea salt
- 1 tbsp vanilla extract
- 1/2 cup applesauce (unprocessed)
- 1/2 cup shredded carrot
- 1/2 cup almond milk (optional if needed for desired consistency)


Preparation:

- Preheat oven to 350 degrees
-Mix dry ingredients well. Add in beaten eggs, honey, vanilla, applesauce and shredded carrots.
- Mix well until smooth.
- Lightly grease muffin tin with olive oil or coconut oil.
- Pour in smooth muffin ingredients.
- Bake 35-45 minutes

Notes: Raw honey not 100% Paleo is used in many Paleo Recipes. Stevia is 100% Paleo but I prefer raw honey. Optional add almond milk for desire consistency if needed.

Lemon Tart with Chestnut Pastry
Delicious Paleo Dessert Recipes No Grain, No Dairy and No Soy. Ingredients coconut cream, fresh lemon juice, raw honey and arrowroot flour.  Chestnut no grain pastry base.

Paleo Lemon Tart Dessert Recipe

Serves 8-12


- 1 batch pre-made chestnut pastry (recipe below)
- 2 cups coconut cream
- ⅓ cup lemon juice
- Rind of 1 lemon, finely grated
- 1 tbs raw honey
- 2 eggs
- ½ cup water
- 1 tbs agar agar powder
- 1 tbs arrowroot flour

Preparation:
- Place the coconut cream, lemon juice, lemon rind, honey and eggs in a bowl and whisk together well with a fork.
- Place the coconut mixture into a saucepan on medium heat and bring to simmering point, stirring regularly.
- In a cup combine the agar  and arrowroot flour in 1/2 cup of water. Add to the pan and stir constantly for 3-4 minutes, or until the agar agar has dissolved and coconut mixture has thickened.
- Remove the pan from the heat and place to the side for the lemon filling to cool slightly.
- When the filling has cooled to a warm temperature pour into the pre-made baked chestnut pastry base. Cover with cling film and place in the refrigerator for 2-4 hours or until set.

Lemon Meringue Pie
Paleo Lemon Meringue Pie

Paleo Recipe: Paleo Diet or Paleolithic Diet Recipe is Gluten, Dairy and Soy free.
Ingredients
Lemon Filling

- 1 cup lemon juice
- 5tsp finely grated lemon rind (approximately 4 lemons)
- 1/2 cup maple syrup
- 1/2 cup coconut milk
- 4tbs arrow root
- 5 egg yolks

Meringue
- 5 egg whites
- 2 tbs maple syrup

Instructions
- Preheat a fan-forced oven to 160o Celsius/325 Fahrenheit.
- Place lemon juice, lemon rind and maple syrup in a medium size pan on low heat.
- In a small bowl, combine coconut milk and arrow root powder. Add to lemon juice mixture, stirring consistently until simmering.
- Beat egg yolks together in a small bowl then add to simmering lemon mixture, stir constantly for 3-4
minutes, or until mixture has thickened. Pour into a pie dish.
- To make the meringue, beat the egg whites and maple syrup in a medium size mixing bowl until stiff
peaks form.
- Spoon the meringue on top of the lemon filling then place into oven and bake for 8-10 minutes, or
until lightly browned.
Cool before serving

Dairy Free and Gluten Free Ice Cream Recipes
Dairy free ice cream recipe. Coconut milk is a Paleo Recipe friendly cow's milk alternative. For a chunky version of this refreshing dairy-free ice cream, stir in a cup of fresh chopped strawberries, peaches, apricots or mango into the coconut mixture before transferring it to the ice cream machine for freezing. Ice cream recipes dairy and gluten free.
Ingredients

- 4 egg yolks
- 1/2 cup honey (orthodox Paleo Diets do not allow honey)
- 1 (13.5- ounce) can light coconut milk
- 1 (13.5- ounce) can regular coconut milk
- 2 teaspoons vanilla extract

Preparation In a large bowl, whisk yolks and honey together until pale yellow, 1 to 2 minutes. Add light and regular coconut milk and whisk again until well combined.

Transfer coconut mixture to a medium pot and cook over medium heat, stirring constantly, until just thickened and mixture coats the back of a spoon, 8 to 10 minutes. Be sure not to let the mixture boil. Remove pot from the heat and stir in vanilla.

Transfer contents of pot to a bowl and chill until cold. Process mixture in an ice cream maker according to manufacturer’s instructions then transfer to a container with a lid and freeze until firm, about 2 hours more.

Paleo Banana Bread Recipe
Ingredients:


- 3 eggs, separated
- 5 tbsp honey
- 4 tbsp olive oil
- 2 mashed bananas
- 1 tsp vanilla
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 2 cups almond flour or finely grounded almonds
- 1/2 cup almond milk (optional for desired consistency if needed)

Directions:

- Preheat the oven to 350F.
- Cream the egg yolks and honey in a large bowl until light and fluffy.
-. Add the oil, vanilla, mashed banana, cinnamon, baking soda and almond flour and combine well.
- In a separate bowl, beat the egg whites until stiff peaks form.
- Fold egg whites into the banana mixture to pull it away from the sides before gradually folding the rest of the egg whites into the mixture.
- Line a loaf tin with coconut or almond oil and pour the banana mixture into this.
- Place in the oven for 40-45 mins

Strawberry and Cream

Paleo strawberries and cream recipes. Substitute strawberries with fresh sliced peaches, blackberries, blueberries or bananas. Paleo friendly cow's milk is substitutes with almond milk, hazelnut milk, hemp milks or coconut milk.


Ingredients
  • 1/2 pound of fresh strawberries
  • 1/4 cup grated coconut (optional)
  • 1 cup hazel milk, coconut milk or almond milk (to taste)
Preparation
  • Remove stem for each strawberry
  • Rinse and drain strawberries
  • Combine cleaned and drained strawberries with grated coconut.
  • Put fruit in bowl and cover with coconut milk, almond milk, hemp milk or hazelnut milk.
  • Serve and Enjoy!
Paleo Coconut Walnut Bread Recipe


Paleo Dessert Recipe
Ingredients:
  • 1 Cup Almond Meal
  • 1/2 Cup Coconut Flour
  • 1 tsp baking powder
  • 2 Eggs
  • 1/2 Cup dried shredded Coconut
  • 1 Cup Coconut Milk
  • 1 Cup finely cut Walnuts
  • 1/2 cup shelled Walnut halves
  • 1/2 Cup Organic Extra Virgin Coconut Oil
  • 1/2 Cup Honey (orthodox Paleo Diets does not allow honey but raw honey and agave nectar used in many Paleo Recipes)
  • 1 tsp baking powder
Directions
Blend together eggs, coconut milk, coconut oil and honey. Combine coconut flour, almond meal, baking powder, and shredded coconuts. Combine liquid ingredients and dried ingredients whisk thoroughly into batter until there are no lumps into cake batter. Pour ingredients into greased 9x5x3 inch or smaller loaf pan. Top batter with remainding walnut halves. Bake at (350F) for 40 - 50 minutes. Remove bread from  pan and cool on rack.

Paleo Raw Food Apple Crisp

Paleo Dessert Apple Raw Crisp


Nutritious Raw Food Paleo Dessert Recipe. Fresh apples topped with mixture of nuts, spices and raisins. Can substitute apples with pears, peaches or apricots if desire.

Ingredients
- 4 apples, cored and chopped (Can substitute apple for pears)
- 1/2 cup orange juice
- 3/4 cup pecan halves
- 3/4 cup sliced walnuts
- 3/4 cup golden raisins
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1 teaspoon nutmeg

Preparation
Put apples in an 8-inch square baking dish or 2-quart casserole dish. Drizzle with orange juice, toss until the fruit is coated and smooth the top. In a food processor, combine pecans, walnuts, golden raisins, ginger and cinnamon and pulse just until chopped. Spoon the nut mixture over the apple mixture and serve.

Dried currants, raisins and cranberries combine with fresh apples, ginger, nutmeg, cinnamon and allspice in this comforting cold-weather apple pie recipe.

Dairy Free Apple Pie

Ingredients

- 4 Fuji apples, peeled, cored and chopped
- 1/3 cup seedless raisins
- 1/3 cup dried currants
- 1/3 cup dried cranberries
- 1/4 cup crystallized ginger, finely chopped
- Zest and juice of 1 orange
- Pinch of salt
- 1/2 cup packed brown cane sugar
- 1/2 cup plus 2 tablespoons apple juice, divided
- 2 tablespoons all purpose flour
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon allspice
- 1/2 teaspoon ground ginger
- 2 (9-inch) pie crusts (1 in pie pan, 1 top crust)

Method
- Preheat oven to 400°F.
- Combine apples, raisins, currants, cranberries, crystallized ginger, orange zest and juice, salt, sugar and 1/2 cup of the apple juice in a large saucepan. Bring to a boil, then reduce heat to a simmer and cook for 7 to 10 minutes, or until apples are tender. Meanwhile, stir together remaining 2 tablespoons apple juice and flour in a small bowl. When apples are tender, stir in flour mixture and cook, stirring constantly, until thickened, about 1 to 2 minutes. Remove from heat.
- Stir in cinnamon, nutmeg, allspice and ground ginger, then pour the fruit mixture into the prepared pie crust. Top with second crust and flute the edges with your fingers to seal them. Make 3 slits in the top of the pie to allow steam to escape. (You may also make the second crust into a lattice top, if you prefer.) Bake for 40 to 45 minutes, or until crust is golden brown and filling is bubbly hot. Set aside to let cool slightly, then serve warm.

Paleo Coconut Whipped Cream Recipe

1 (14 ounce) Can Coconut Milk
2 tablespoons Stevia
1/2 teaspoon Vanilla
Preparation
Place can of Coconut Milk with mixing bowl separately in refrigerator 12 to 16 hours.
Place beater in freezer 15 minutes before beginning.
Remove solid coconut cream from can.
 In chilled bowl with beater, beat coconut cream approximately 3 to 4 minutes until fluffy.
Beat in Vanilla and Stevia.

Serve: Or cover will keep in refrigerator for approximately 3 days.

Paleo Grilled Peach Recipe
Fresh grilled peaches top with Paleo Whipped Cream Yummy!



Ingredients
•4-6 ripe peaches, washed, dried and cut in half remove pitts
•1/4 teaspoon Cinnamon
•2 tablespoons stevia
•Dash of salt
•Juice of half a lemon
•Grill spray (olive, almond or coconut oil

Preparation
-Place peach halves skin side down on a plate. Squeeze the lemon juice over the top of all the peaches. Sprinkle tops with salt, stevia, and cinnamon. Set aside while you preheat your grill.
- Clean grill.
- Grill at a medium-high heat (about 300 degrees Fahrenheit)
- Place the peaches skin side down on the grill. Grill skin side down with lid closed for about 3 minutes.
- Turn peaches over and grill on the other side for about 2 minutes with the lid closed forming nice grill marks.
- Remove from grill and place on the same plate you originally had them on or a decorative plate.
- Serve warm with your favorite topping. Suggestion Coconut whipped cream.
